2 Roosters to butcher -ugh

One old rooster, one young rooster, and I skinned them. I was thinking of pressure cooking, but that old boy is tough, he was even tough to skin. So... do I put them in the fridge to wait, do I pressure cook them, then pressure can them?
 
I hate butchering. That's why I'm going to get egg laying hens.

BTW, do Roosters taste like chicken?
Lol, yes, but the problem is the stuff people are used to getting from the store doesn't so when they eat their first "real" bird they can be put off by it tasting "funny" (especially if not prepared right, as a mature bird requires the right method to yield texture that is edible

I’ve haven’t pressure cooked any of mine. However even the young ones are rested in fridge with a ziplock baggie and a little salt, no water. At least 3 days wait.
