3 1/2 week old poult hissing

I have 5 bourbon red poults that are roughly 3 1/2weeks old. One of them has been very stand offish since we got them and will run from us and dodge our hands in the brooder. Well tonight me and my husband were sitting out with them in the garage so they could stretch there wings and 4 off them decided to perch on my husband. The one that doesnt seem to like people jump up on him also but when ever my husband moved or brought his hand up to adjust the poult would hiss. It did this several times finally I looked while it was hissing and it was puffed out also. When I picked it up off his shoulder it hissed again. Question is, is this normal behavior so young, do we just need to earn his trust or is it a sign he may have a bad attitude in the future?
 
I was able to tell my children's personalities from the moment they were born. This poult will probably always remain a litle bit stand offish.
 
I thought it was anormal signal. Just a hey dont touch me kind of thing. It was so funny to hear the little baby hissing a little shocking lol. I hope he/she gets friendlier.
 
He's not very stand-offish if he is coming up and sitting on your husband's shoulder.

My turkeys tolerate being picked up rather well, but I wouldn't say it is their first choice for interaction. I don't think any poultry enjoys being picked up and carried. Some just tolerate it better than others. You've got a turkey who enjoys being picked up even less than the others do.
