Can someone please explain the difference in these 3. And which one is the best!!! Thank you!!

Basically, the last model does almost everything for you - controls temperature and humidity automatically - all you have to do is increase the humidity towards the end of incubation.

what's the easy water up lever indicates thing that it doesn't have?

I believe that is for manually controlling humidity. Since the humidity is controlled by the incubator, there's no need to add water, manually to control humidity.
