4 different breeds 5 months old--feed help!!!

My five hens are nearly 5 months old. I have 1 RIR, 2 Barred Rock, 1 Americauna, and 1 black sex link. None have started laying. I am still giving them chick crumbles and they seem so uninterested! They love scratch but I know that should only be a little part of their diet. Everything I read says no layer food until they lay. How can I be sure they are eating the right stuff? And what happens when one or more start laying and the rest don't? Feed the same?

At 5 months I would be feeding them either a grower mash or pellets or layer and just feed them all the same.

Grower or flock raiser with crushed oyster she'll on the side, then they choose to use it when they need it.
