One of our EE can be pretty aggressive when eating out of our hands. She almost snaps at our skin and then pulls. I’ve notice one other chick doing this same thing. I don’t know if this is normal or not... it doesn’t make me want to feed them treats from my hands!

They're being pushy about treats. I find it easier to just throw treats on the ground, instead of getting my hand pecked by eager birds. Or you could always wear gloves or serve the treats in a small cup if you want to "hand" feed without risking your skin.
There are times there's one in a bunch that will not be gentle grabbing treats for the hand ... My favorite right now is one of those. As recommended, use gloves or toss on the ground to save your hands. I have yet had any that will "change" and take nicely.
Some birds are gentle and others are not.
