I just cooked up my first raccoon a few days ago. I brined it for nearly a week, then cooked it a crock-pot until nice and tender. It's delicious! Very similar to beef, actually. My DH wasn't very enthused about this at all, but after he tried it, he asked if I'd like him to hunt raccoons to put in the freezer.
I think I'll set my live trap and see what I get. Apples and marshmallows work great for raccoons and possums, BTW, without catching the family cat.
