8 dozen eggs

I have 8 dozen eggs stockpiled in my fridge from the last 2 weeks - and now what do I do with them all? LOL. I've pickled, I've deviled, I've done egg salad - now what? LOL.

Sort of, more a baked omlette, but you can spinach and ricotta that bad boy up, add some bacon, and call me for dinner.

I think there's an old-fashioned pound cake out there that uses 30 eggs....
