OK but is it a good idea once my quail stop laying eggs that I butcher them?
If you want to, sure! There's no "right" way to manage your flock (though I know of a few wrong ones lol). If you want maximum egg production along with some meat you should consider butchering them at 2 years when their egg laying slows and replacing them with younger pullets.
