About to start butchering my first batch - Any advice?

I found it helps to have the work table up high, about even with my elbows. When it's lower, it kills your back after a while to bend over so much. I hang my birds from a frame so they're also about chest-high when I pluck, and that way I'm also able to use 2 hands to remove the feathers.

I've not heard of plunging the birds in ice water after scalding, how does that help?
 
The cold water dunking is one of frugal's steps, he says to prevent the skin from tearing.

We added a little dish soap to the water after we'd already plucked a few. I think it was supposed to make the plucking go easier. Did not see that it made any difference.
