I'm getting my emu eggs soon from the mail. Do you leave them sitting for 24 hours before placing them in the incubator? Once in the incubator do you start turning that day or wait an additional day? I couldn't find this information anywhere, thanks.

yes.. let them sit at room temp for 24 hours..
once in the incubator you can let them sit for 24 hours un-turned or start turning that day.. However by the second day of incubation you must start turning them or you'll risk issues with the developing chick
