after incubating?

Chicks can go without food and water for 3 days, but if they are all hatched and fluffy I would move them to a brooder sooner if possible. All you need is a big plastic bin and a heat light to make a brooder. You can find the fixture at Walmart around the tools area for less then ones marked for brooders. Same thing. Add a 75 Watt bulb and put it over one side of the brooders. You will need dishes for chick starter and water. You should keep the water shallow and add aquarium pebbles or the sort to keep chicks from drowning. Newspaper or paper towels make a good substrate to use at first.
 
Would it be okay if I left them in the incubator with food and water for a couple of days?

If you dont have a brooder ready for them than you can leave them in there up to three days, after that they have to go in the brooder with food and water.
