after processing my turkey's ?

Hi after I process them do I freeze them or should I let them set for 24 hours also seeing Thanksgiving is next Thurs should I keep one out of the freezer.

We'll be processing a few turkeys tomorrow (Sunday) and will let them "rest" overnight in ice water. Once they're packaged up on Monday we'll just be sticking them in the fridge since they'll be cooked on Thursday. Tomorrow we'll only be processing the number of turkeys we're selling and/or keeping for ourselves, however in early December we'll do the rest and freeze them to be enjoyed at a later date.
