I've heard that chickens will lay most of their eggs early in the morning, and rarely after 3pm... I don't believe that I've ever gotten an egg before 3pm, usually I find them in the boxes around 5pm until dusk. Is this something to worry about?

They will lay pretty much any time during the day, just generally not too late in the day as if they take too long, they can have trouble getting onto the roost in time. I wouldn't worry about it, maybe your chickens cycles line up with the latter part of the day.
