Age for culling question

I have a 20 austrlorp cockerel that I have raised organically but have not been able to sell so I'm going to cull him. 20 weeks is a fine age for his breed, yes? Going to make croq au vin. He won't be too tough, right?

I've read that 16 to 18 weeks is a good age. That is when I plan to do my extras.
