Newbie to chickens, what happens at a poultry show?

There will be different types of fowl such as turkeys, ducks, and mostly chickens competing for whichever the judges think are the best looking. I really enjoy looking at all the different types of chickens. Also there will be people selling chickens. Last time there were rabbits for sale too.

I'm in Lillian (Baldwin County), near Pensacola, FL. Anyone have input on the best layers for our warm to hot area? Anyone here use organic feed?

I'm in Mobile. Mediterranean breeds (incl the Leghorns) are bred for heat. I have a friendly Leghorn, several Ameracaunas, 2 BCMs, and a BO that have no problem. We'll be regaining a Cochin soon who was OK last summer; our birds free range and we have a number of shady areas. I'd never keep her in a small pen around here, though.
