I don't know how long it has been going on, but egg eaters feathers are unusually shiny and glossy. I found that out the hard way. Then I put plastic eggs (lots and lots) in the nest boxes and filled them with sand.
I made sure to collect eggs often every day and soon they stopped eating the eggs because they couldn't find any good ones to eat. However I did get rid of the ones that I was pretty sure were doing the eating.
 
I've heard that an easy way to find the egg eater is to roll an egg a few feet across the floor. Most chickens will give it a peck or 2 just to check it out and then leave it. An egg eater will peck at the egg, more then a couple times and hard enough to break it. Easy enough then to figure out which ones to cull.
