Alternate forms of feed or supplement

I just had a brillant thought...

My mom had spoiled the chickens with grocery vegetables during the winter and they had good egg production throughout despite less than 12 hours of light.... and i know that my birds love clover and alfalfa.... just not the stems and i do not think they like the 'remainder' of flakes of the hay....

What if... one fed them rabbit feed or just alfalfa pellets? In addition to the normal chicken chow. and even more so in the winter when they are "green" deprived... they look just like the layer ration... just green.... or have them soak a little while in water then feed it...

Or for those who want to fatten their birds but not use corn or other grains... What about beet pulp? soaked of course. Used that once to have a few horses bounce back from the brink that my friend rescued....

Also I have conflicting information about Oats fed as a 'cooler' feed choice as layer or scratch during the summer. if used as the main feed for layer then oyster shell is provided on the side.

??? Possible good ideas?
