When I first purchased these (I believe there are 7 Ameraucanas and 3 EEs) I could tell them apart. Not anymore... is there a way to? I'd also really love to know what colors they're going to be... I tried to attach some decent photos... would love to hear your thoughts.

Also, any advice for sexing them in the coming weeks?

That makes sense, and thanks for the correction.

Also, do any of these colors have names, or are they just sort of mutt colors on my mutt birds?

As they aren't pure bred, they don't have names for those colors. What you have above is good enough.
And if they're from a hatchery... they aren't really 'mutts'. Hatchery EEs are bred to each other for generations, the only time they aren't is when they throw an Ameraucana in the mix to refresh the blue egg gene.
