I just bought 3 chickens and they were supposed to be hens. I am new to having chickens and haven't raised this breed and feel like their feathers are a lot different than my others, it doesn't help that they are molting too. Are all of these roosters? I feel like I got scammed.

All are cockerels/roosters. I'd be contacting the seller immediately.
I did contact her. She informed me that she told me that I didn't have to buy them and she won't take them back. She claims she is getting rid of her flock due to "health declining and she is unable to care for them". What really bothers me is that she if she didn't sell them to me, she was going to take them to swap meets/sales and still selling them as hens. I spent $20 per chicken with the thought they were hens. I should have went with my gut and not purchased them.

I'd tell her that you want your money back. They were sold to you as hens and they very clearly are not. You are new to chickens and trusted her. Now you are stuck with 3 roosters that you'll be lucky to give away and out $60 that you could have spent on actual hens.

Listen to @Overo Mare 's advice. She knows her stuff!

I'm so sorry this happened to you @MW1833. Unfortunately some people are just really ugly. In the future, please don't hesitate to post pics here before buying. We will help you the best we can to avoid this happening again.

Thank you! I should have posted a picture of them here beforehand and definitely learned my lesson. She sent me a poor quality picture and thought I would be able to tell better in person, but couldn't with their molting. Is there any advice you can give to help me identify better in the future? I know that the saddle and hackle feathers on roosters are longer and pointed but I couldn't tell with these guys. Can you tell by the comb? I wasn't sure what the hens comb looks like on this breed. I also assumed since it is a mixed breed that the combs may vary by chicken?
