I've got one black and one splash Americauna cockerel. I'm thinking of breeding them to my barred rock hens. I'm newish to chickens... wondering what this cross will produce in terms of feather colors and egg colours? And am I better to use the splash or the black cockerel? Any fluffy-cheeked barred chickens in my future? Thanks in advance!

That would result in a sex linked cross. All males will be barred and all females will not be. Assuming the barred rocks are black, f you breed the black rooster to the barred rocks, the chicks will be black. If you breed the splash rooster to the barred rocks, the chicks will be blue.

So to get barred hens with cheeks, would it have to be a barred roo over Americauna hens?

To get a barred hen, you would have to use a barred rooster, yes. The cheeks (muff and beards, I assume?) are dominant.

EDT: I did this with a red hen and a crele-ish rooster:
