Can someone please tell me if there is a difference between an Amerucana chicken and a Easter Egger chicken?

Yes, Ameraucanas are pure bred chickens that breed true to color and type. Easter eggers are crossbreds which may carry the blue egg gene. Type 'Ameraucanas or Easter Eggers' in the search bar at the top of the page. There are many threads on the subject.

Now this is interesting to me, as I was under the impression that chicken breeds were more akin to physical types/phenotype ("does this bird, regardless of origin, meet the standard?") rather than pedigree tracking ("is it purebred/can we track its ancestors in a registry regardless of what it looks like?").

Your impression is correct.
