What blood building supplement should I use? This is all excellent information, I appreciate it so much.
B12 is an important vitamin for the building of red blood cells. Most good quality poultry vitamin-electrolyte water dispersible powders should have B vitamins in the ingredient list. I use them 2-3 days a week. Overweight birds that become inactive can get what is known as fatty liver disease, so it is good to know choline is in greens like, kale, and fresh sprouting grasses that come up this time of year through Spring. Not sure which feed stuffs contain thioctic acid, but that helps clean the liver and support it similar to choline. There are good supplements which contain thioctic acid like Lewerstim. Bludform is another blood builder used mostly by pigeon enthusiasts. Here are couple things I use:

This is an excellent probiotic to be used with vitamins which do not contain probiotics, or by itself once a week. The probiotic bacteria is bonded to whey, which is also beneficial to a chicken's diet:

I don't feed my birds table scraps or anything on the verge of spoiling. They get a balance of animal and plant proteins in a 17% layer ration and that's the base diet. Plant proteins are in the feed and what they get on range. Animal proteins are milk derived or fish. I don't load up feeders to last all day, but put enough out to finish by the time I get home from work. I then set out enough feed to last them until they go in to roost for the night. 3 grain scratch is only given on occasion and during Fall and Winter. Nutritional yeast flakes or powders like Kal brand has a high profile of B vitamins and amino acids, but is only a good addition to feed once a week. Wheat germ oil needs to be added in order for powder to adhere to feed and be ingested. Much depends on what is available and how much time you want to spend preparing. There are some examples.
