We are looking to add quail as a meat bird for our customers. Which types of quail would you recommend. I am looking into a mobile processor that will come to my house to butcher. It is USDA certified. Any help or ideas welcome.

Jumbo Coturnix Quail. They reach butcher weight at approximately 8 weeks. Northern Bobwhites are another option. They grow slower and will take longer to reach butcher weight. Coturnix would probably be your best option since your trying to market them.
