This recipe in particular I cannot post for two reasons.

First reason is copyright.

Second reason is it’s a compound recipe. This means that you make multiple different recipes and then combine them into one recipe. It’s extremely complicated. In this case, you combine 4 different recipes to make one recipe.

The sauce alone is one recipe. The meat glaze is one recipe with additions. The potatoes are a recipe by themselves, and the meat is a recipe also.

Thats Escoffier for you, complicated but delicious.
