Any cheesemakers out there?

Im not a cheese maker, but Im a cheese eater!

I haven't made wine yet but I just found this recipe on ehow.

There are so many blackberries growing wild around here. I usually just freeze them. What type of wine do you make? My fermentation book has a Mead recipe that sounds good. I've made kefir-didn't like it. I made ginger beer a few years ago-it was good...There's also a recipe for country wine. It sounds good too.

Hello, I make fruit and juice wine and also buy kits in wine stores, which are great and they come in many varieties of grapes...
 
I made 30 minute mozarella today.....Very easy recipe.....Very good cheese....This recipe is from Mother Earth News.

1. Mix citric acid into gallon of whole milk (make sure it's not ultra pasteurized or it doesn't work)
2. Heat until warm
3. Add rennet
4. Stir and heat until 100 degrees or so - the curds will magically appear
5. Remove curds with slotted spoon
6. Microwave on high for 1 minute, drain whey and knead with spoon
7. Microwave for 35 seconds, drain whey and knead with spoon
8. Repeat #7 and knead in some cheese salt
9. Eat or store
