I am looking to cook 2 RIR roosters ,wondering what's a way to get a whole bird not tough but still have that farm fresh flavor if you know what I mean!Thanks
 
My favorite whole chicken recipe just uses salt, inspired by Chef John from Foodwishes.com. Sprinkle kosher salt inside and outside and roast for about an hour for 3.5lb chicken at 450F. After soaking up and discarding most of the oil, I make a sauce out of the remainder drippings, but hardly anyone uses it because the chicken comes out so juicy by itself.
 
I ate my first one in a chicken chilli soup , it tastes the same as always but I know the meat had a good life so mentally it was better
