Any ideas on what poultry I should get?

You might try turkeys or geese depending on what your set up is. I'm going to try peacocks in the spring.
 
Will you have a separate coop/run for whatever you plan on getting? If so then really you could get anything, I've got pheasants, Turkeys, Chickens, Guineas, Ducks/calls, and plan on getting a breeding pair of geese this spring.
 
As pretty much everyone has stated, ducks would be a great next step. However, they will need to be kept in a separate enclosure because a) the chickens most likely will go after them, b) they need a different coop setup, and c) their poop needs to be managed differently since it's mostly liquid.

If you're looking for supreme egg-laying duck breeds, I suggest Golden 300 Hybrids. But if you're looking for something more traditional/heritage type, then Khaki Campbells and Welsh Harlequins are great.
If you're looking for something more ornamental, Cayugas and Muscovys are great.
 
My favorites to raise have been turkeys. They can be really loving and sweet. Quail are easy and cute, but do not like to be messed with. Ducks are the messiest creatures ever. I love my ducks but oh boy, the mess. I had guinea hens and they were super annoying. So my vote is turkeys or quail.
 
Quails are good birds to have. Some people find them annoying with the males crows. They will crow no matter if there is light or not. It's as if they never sleep. But everyone in my house loved it and found them fascinating. I've herd that quails droppings can be toxic to chickens. I don't know much about it and never really looked into because I didn't have chickens when I had quails. Quails don't like to be held. They are skid-dish in my experience. But I have always hatched mine from eggs in the 100's. So one on one bonding wasn't capable for me. I did however have a pet quail who was my very first quail hatch. (Only 1 out of 150 hatching eggs from ebay). It was hard rasing the poor thing by it's self. He would follow me through out the house. So you might just like quails!

Thanks so much for the information. I am planning on getting more coops and so I may be able to get more chickens (if anyone has a recommendation on breeds it would be appreciated) and still get ducks and/or quail!

You could order a surprise box from Cackle. It's an assortment of 40 to 50 birds, but there is no telling what those birds will be. Could be any combination of turkeys, geese, ducks, meat chicks, layer breeds, bantams, or rare breeds.
