Any thoughts on what could have done this?

She is probably in a lot of pain so unless you want to pay a lot of money to get her worked on by a vet I'm afraid the best course would be to put her down. In most instances I would say let her live but an open throat?

Thank you everyone for your responses. They were very helpful. I've locked them up inside the roost at night the last couple of evenings, but they really prefer it up on top of the roof of the coop. I'm going to elevate the chicken wire that encloses the top of the Pen and make sure there's a good 3 feet between it and the top of the coop. If anything decides to try reaching down through the wire mesh, it'll need long arms to reach them.
