Anybody ever heard of "speedies"?

Speedies are strictly a Central NY phenomenon. Even in other parts of NY they're unknown. Italian dressing works but for the real deal you need "State Fair Speedie Sauce"
 
Have you people never heard of Civeche?

Even though it isn't cooked with heat...it is "cooking" in a way in the wine. So don't let the fact that it is raw meat freak you out. It really isn't for long. And the oil layer is sealing out the oxygen so bacteria can't grow. The acids in the marinade are doing the same thing.

i am here in new york and have never left them on the counter.. fridge only here!! any meat works.. lamb pork chicken beef.. you grill it like a kebob then take it off the stick or skewer and put in sub roll or some long bun
