Anybody have a good Jerky Recipe?

Hey ya'll,

Hubby and I have been on a Jerky rampage, trying all different kinds of marinades. We had some pretty good batches, not great, but ok, and one really really bad batch, that smelled horrible while dehydrating and tasted bad too, so we had to just toss it. So I was wondering if any of my BYC friends had some good recipes! Also I think somebody should start a home made jerky swap! Mmmm!

Here ya go -

This is not for dehydrating, but for smoking.
I don't know anything about dehydrating, but it may work!
(The best meat do do this with is eye of the round)


Recipe for 2 eye of the round roasts ~5lbs
2 qt. water
4 tbsp. soy sauce
2 tbsp. teriyaki sauce
2 tbsp. black pepper
4 tbsp. salt
2 tbsp. white vinegar
1 tbsp. red pepper
2 tbsp. garlic

Smoke for apprx. 4 hours
 
Here's something I do.

Marinade ingredients:
Necessary water, to cover meat,
1/2 onion, sliced
2-3 cloves of garlic, crushed/ chopped
1 habenero pepper, or whatever you have
few drops of liquid smoke.
tablespoon of soy sauce
tablespoon of salt

Bring to a boil, for about 10 minutes, and let cool.

Slice the meat, with the grain...The thinner, the better.

Marinate, at least 12 hours

apply black pepper, before dehydration

Dehydrate, at about 120 degrees, farenhiet.

we make this alot but its not Marinade (jerk chicken)

we get chicken thighs and breasts ( salt and pepper ) cook them on the grill till there all most done. Then "blackened" till done. nice and crispy

ingredients

World Harbors Jamaican Jerk Sauce 1/2 Bottle (most stores have it..google for a pic so you know what your looking for)
heinz catsup 1/2 cup give or take

loaf of French bread with lots of butter.
1 large pot

cook chicken..after take a fork and shred chicken into the pot add all ingredients (not the bread) let simmer on medium low heat cover 15 to 20 minutes
then serve with French bread on the side . it should look like pulled pork.

its not the best recipe but we like it. hope someone likes it too..

I know this is an old thread but I wanted to post my recipes. I love to make jerky and spend a lot of time looking for new ways to make it.

Teriyaki Jerky
20 fl.oz. Teriyaki Sauce/Marinade (I use La Choy brand)
10 fl.oz A-1 Steak Sauce

Marinate 7-10 lbs of meat overnight in the refrigerator. Put on dehydrator and dry at 155 F till done. There will be a sticky glaze on the jerky that makes it a messy treat. Store in the fridge for up to one month. If you wanted it to last longer then you should add salt to the recipe but around here it doesn't last that long anyway. If you wanted to do less it's a 1/2 ratio.

Beef Jerky

3 Tbsp. brown sugar
3/4 cup A-1 Steak Sauce
1/2 cup worcestershire sauce
1/2 cup soy sauce
pinch of tobasco sauce
3/4 tsp. Hickory Smoke sauce (aka. liquid smoke)
1/2 tsp. seasoning salt
1/2 onion salt
1/2 garlic salt
1/2 tsp Hickory salt

Mix well and marinate meat for 1 hour and then dehydrate. This makes a saltier jerky than the one above and will last a long time. This is another favorite at our house.
