Take out the mayonnaise and replace it with cool whip, and that's something my grandmother occasionally made. I think there might have been pineapple in it, too. It wasn't bad, but sweet stuff isn't my thing.

This guy makes recipes from actual cookbooks. A lot of them are jello salads, including the one linked. :sick
I have been informed that a lot of recipes like this wound up in church cookbooks and whatnot so as to keep folks from bugging the contributer for more recipes. Not a bad strategy.
My grandmother gave me a church cook book once. It was jam packed with bizarre recipes. At least 3 had squirrels. And more butter and mayo than any human should eat in a lifetime.
 
My Nana used to make a green jello salad every holiday. My family continued it after she died. Then my ex hated it so I haven’t had it in years. I miss it! Maybe I’ll ask my mom for the recipe again. 😂

This makes sense! I have several cookbooks from the 60s era that were published by churches. Every one of them has some recipes that I'm like, who would eat this? Maybe they didn't, lol.
 
I prefer my salad to just be leafy greens (and some average toppings)

But I'm from an area with tons of "salad" and casseroles. So I've seen plenty of the ones you're describing.

There was some decade where suddenly gelatin-everything was forcibly trendy. (Along with other non-jello things)

It's not a "salad", but I like yogurt jello (Replace some water with yogurt. Mix, set, eat.)
 
What are funeral potatoes?
It’s kind of a potato casserole with potatoes, cream of chicken/mushroom soup, sour cream, shredded cheese and toasted corn flakes on top. They call it funeral potatoes because a lot of times there is a pot luck after a Mormon funeral and someone always brings these.

Side note: they don’t actually like to be called “Mormons;” they prefer Latter-Day Saints. But if I called them that probably no one would know what I meant lol
 
So I'm just curious as a southerner who constantly sees those weird jello, mayo, broccoli, pistachio, whipped cream, onion, coconut, walnut, raisin and fruit cocktail salad things at potlucks, do any of y'all actually eat them or even crave them? Dgmw some of them seem okay, and I'm always willing to try whatever weird concoction someone's grandma made, but most of the time I find them absolutely repulsive.

Depends on the salad. I grew up with an orange jello shredded carrot one that I've NEVER made for my kids. My MIL made one of cool whip, orange jello mix, mandarin oranges and cottage cheese that I've played with: different jello mixes, different fruits. Results: pretty good. Raspberry/peach, cran/orange, lime/pear...any fruit combo that appeals to your taste buds should work.

I've also been exposed to the ambrosia one. As I cannot stand coconut, it's a hard no unless that's omitted. Nuts with jello reduce the appeal too (texture thing: jello shouldn't crunch)
