Anyone have a problems peeling their hard boiled eggs?

My mother forwarded me an email on things you can use vinegar for, and one thing was adding it to boiling water to make eggs easier to peel. I tried it and it worked for me - just add some vinegar to the water.

My other complaint about making deviled eggs or egg salad with my fresh eggs is that the eggwhite gets all rubbery! My family doesn't even want deviled eggs with my hens' eggs.

Has anyone noticed that?
 
I don't like using vinegar because I swear I can taste it.

As for the egg whites being rubbery, never noticed it. When I make two dozen deviled eggs, my hubby will eat them all before the guests arrive!

We have always loved deviled eggs too, but for some reason, my egg whites are chewy. I wonder if the eggs are too fresh. Maybe I should let them age a couple weeks.

Deviled eggs are a good way to clear out your inventory! Mine are building up. Definitely an omelet weekend.
 
If you're going to boil your fresh eggs you have to plan ahead. First wash them in warm water, scrubbing to get the bloom off, this is so they will dry a bit. Then put them in the refrigerator for a week. Now put them in a pan of cold water with some added salt. Bring to a rolling boil for 8 -10 minutes. Drain and place in cold water with ice cubes for 8 - 10 minutes. They should now peel just fine. What we generally do is use our eggs as we get them but there are always more than can get used within a day or two so these are washed and put away for boiling. After a while we have a lot of boiling-ready eggs so we're noted for bringing deviled eggs to picnics and parties.
