Anyone have a problems peeling their hard boiled eggs?

I'm glad you started this post. I knew that fresh eggs are a lot harder to peel (my favorite cookbook recommends using eggs at least a week old) but didn't realize there were ways to get around this! Will definitely be trying some of the tips on this thread. Thanks, everyone!

I'm going try this b/c the wife buys store eggs every time she needs hard-boiled. Now that the girls are laying, I really don't won't here bringing those things home.
 
Oddly enough I've had LESS trouble peeling my ladies' eggs than store bought eggs, no matter how fresh they are. I cook them just the same as I always have -- chuck eggs, salt, and water into a pot, let it boil, turn it down and let it do its thing for 10 minutes (at some point in here it always boils over, but I don't think that's a necessary step

My only though is that it's a shell thickness thing.
 
I have trouble with my fresh eggs as well. But I also don't boil mine for 14 minutes. I like my egg yolks a little softer...8 minutes tops! Unless they are silkies which is around 4 minutes.

Guess I have to sacrifice ease of peeling for having eggs the way I like to eat them.

If they are marans I recommend a pinhole and vinegar in the water... that helps... they will peel everytime...
 
Found the best method on BYC after trying them all:

- Boil water first, then place eggs in - bring back to a boil for 6 minutes
- Turn heat off, put lid on and let sit for 5 more minutes.
- As soon as the timer goes off dump the hot water but do NOT put cold water on them all.
- Only put cold water on the egg you are going to peel. I put enough to be able to handle the egg. Each egg I put under the cold water until I can handle it. Peel all of them this way. They come off almost all one piece with no shredding the egg to bits.

I've told this method to another chicken farmer who said it's the only way she's been able to do it too...after 30 years!
