... who would let me help in processing their birds? I've never done it before, and want to know if it's something I can do. I would love to raise some of my own meat but am afraid that I don't have the nerve to do it.

If we had any to process I totally would. My DH has done about seven birds now. We do have chicks due to hatch this week so in a few months when we send the roos to freezer camp we'll let you come over and help.
