Anyone process their own birds in Central Florida?

I am thinking hard about raising some meat birds next year, but I don't want to do it if I can't process them myself. I think if I could watch someone or help someone, I would be well prepared. I really want to be able to finish what I start.

Is there anyone in the central part of Florida who wouldn't mind showing me what to do? I'll pay it forward!
 
I'm in the Southern end of Volusia. I just butchered 15 meat birds (my first time), and I have 25 more birds coming early next month. So, starting sometime before Christmas, I should be butchering again.

Do you currently have meat birds?

#3: I don't have meat birds this year. I'm thinking about next spring.

How was your first butchering experience? Obviously, it didn't turn you off raising birds for meat, so I'm assuming it went fairly well. How long did it take?

Would you be willing to mentor me in the butchering biz? I have some really nice balsamic red pepper jelly I could barter with. :) Guess I'd have to come up with something to add to make it an even exchange, huh?
