Anyone ready to ring in the new year...and lose weight/get fit?

elizabethbinary, being too thin also has it's health issues. I have a friend that has always been Kate Moss thin...even when she worked at MacDonalds and ate Big Macs three times a day. She's never been able to put weight on. She's had her lung collapse twice because of it. She's been to the doctor many times, recently because she became pregnant. It was a high risk pregnancy because of her weight. Doctors have all told her the same thing, it's her genetic makeup. Many of us joke around that we'd like to have that "problem", but I can tell you that it's not something that most of us would want. The general public is mostly okay, it only takes one insensitive oaf to ruin our day. I tend to pity those oafs....they generally have a miserable life.

babymakes6, I'm such a stress eater!!!! We've had frigid temps. (okay, it's San Diego, but in the mountains it's been 23 with 45 mph winds) and I get migraines in theses winds. Makes one want to curl up and just chomp, chomp, chomp....

It's hard to hold down the fort, especially with little ones to look after. I like to take on Scarlett O'Hara's attitude in times like these, "I'll think about that tomorrow." LOl!!

Reg, back to the treadmill and step it up!! hahaha!! I haven't plateaued yet....dreading it 'cause I KNOW it means more of that dirty "E" word!!! Still, it's great when you break that plateau...you really feel like you've conquered something!!! Kudos to you for consistently losing weight.

Its been very cold here, at least for Texas, and I've been baking and making cold weather foods. Chili, stir fry, quiche (oh my god the cheese!) and veggies in cheese sauce, coffee cake, white bread, blueberry crisp, etc and I've eaten it all. Especially all the wonderful cheesy stuff. I have kept exercising, so I haven't gained, but I'm not losing either.

EB with all the stress of recent life, having your whole city go under water, food probably wasn't a priority. It sounds like you have a healthy diet, but you might want to add more fats to it. Make your yogurt smoothie with the best full fat yogurt you can find. My mom is much to thin, some of it is genetic, and some of it is other issues, but it is almost impossible for her to gain weight.

I go off trying new 'healthy' recipes and lots I enjoy extremely!

We even did lime shrimp tacos one night... it was AWESOME! I've done baked tilapia, and tilapia with pineapple & garlic. We had a stuffed baked tomato night... and seafood stuffed mushrooms... then their were mushroom burgers.... Open face sandwiches to break down on the amount of bread I ate. We've chicken over corn with lemon and cilantro. We had a micro sprout salad on tuna fillets one night that hubby was no fan of, but I really would like to that again. I've done a lot of different slaws & bean salads. Adding almond slices to things for crunch and protein kicks...

If it wasn't for my constant baking.... I'd probably have lost more weight. Dang Black Forest Brownies the other night through my whole week off!!!! (But I did have a chicken, egg and carrot salad for dinner to balance it out. lol )

I really need to start sharing my low fat low calories recipes with you guys.

Ok.. here's a couple recipes with fat/calorie content as well.

Banana & Pumpkin Bread


Flour self-rising 3 cups
Granulated Sugar 2 cups
Apple Sauce no sugar added 1 cup
Bananas 2 medium squishy
Pumpkin-Libby's 100% Pure Pumpkin 1 cup
2 Large whole eggs
2 Large egg whites
Baking Soda 2 tsp
Salt 1/2 tsp
Pumpkin Pie spice 1 tbsp



Directions
Combine all wet ingredients in one bowl and set aside. Combine all dry together in another... then combine the 2 by adding the wet to the dry.

Pour into loaf pans only 1/2 way up the sides of the tins. Same if you are doing the muffin tins, only fill to 1/2 way point.

Preheat 350 degrees. Its done with the toothpick comes out clean. Muffins cook quicker, so check around 45 minutes. Extra large loaf pan can take an hour and 30 minutes. Check at 1 hour.

For an even healthier serving, sub splenda equally to sugar.

Slow Cooker Chicken Breast and Black Bean Chili

Ingredients

Petite diced tomato 14.5 oz can liquid and all
(Or 6 medium chopped fresh tomatoes)
Tomato Paste, 1 6 oz can
Beans, black, 2 15oz cans w/ liquid (or 2 cups fresh homemade)
Chicken Breast, no skin, 1 lb
Onions, raw, 1 large chopped
Fresh Garlic Minced, 2 tbsp
Paprika, .5 tsp
Basil, .5 tbsp
kosher salt, 2 tsp
Balsamic Vinegar, 3 tbsp
Pepper, black, .5 tsp



Directions
Chop raw boneless/skinless chicken breasts into 1/2"-1" chunks.

In a hot pan on the stove top, heat 1 tbsp olive oil. When hot add chicken breast and brown quickly. After 1-2 minutes remove and put into the crockpot. They aren't supposed to be fully cooked at this point.

Now in the crockpot add all the rest of your ingredients, stir and cook on low 6-7 hours, or cook on high 3-4 hours.

**Optional chili powder or hot sauce, I add it after as my husband HATES super spicy stuff**

Makes 6-8 servings

Tropical Tilapia Filets

Ingredients

1 lb Tilapia filets
1/2 cup crushed or cubed pineapple (canned no sugar added)
2 tsp fresh ginger root
2 tsp minced garlic
1 Tbsp Olive Oil
1/4 cup Orange Juice



Directions
In a skillet heat oil.

Add garlic and ginger and place fish in the hot pan. Over the fish add the pineapple. Flip the fish when brown on one side, and let sit for 1 minute before adding the orange juice. Cook an additional 2-3 minutes. Add fish and pineapple over rice or shredded cabbage slaw for a lively fresh dish... and it excellent for you!

Vegetable Herb Stew Topped Egg Noodles

Ingredients

Homemade Vegetable Stock, 6 cups
Bay Leaf, 1 tsp or 3 whole leaves
Mrs. Dash Original Blend, 0.25 tsp
Basil, 2 tbsp
Rosemary, 1 tbsp
Oregano, ground, 1 tsp
Thyme, fresh, 1 tsp
Carrots, raw, 3 large chopped into disks
Onions, raw, 1 cup, chopped
Butter, 1 tbsp
Organic All-Purpose White Flour, 1 Tbsp
Cabbage, chinese (pak-choi), raw, 2 cup, shredded
no yolk egg noodle, 1 whole bag



Directions
Assuming you don't have the already made veggie herb stock, use 6 cups of store bought (or 4 cups store bought & 2 cups of water). Bring this to a boil with all the herbs, salt & pepper to taste. After you get it to a boil, simmer 5-10 minutes.

Now strain the liquid to get the herbs out... you just want the flavor.

In the same pan (no stock in it right now) over medium heat, melt the butter and whisk in the flour. This creates a rue. When it looks playdough like, pour your stock back in. Add your chopped carrots and onions, heat about 10 more minutes and the add the shredded cabbage. (If you don't want to use the chinese cabbage, don't use regular tight heading cabbage, use kale, or spinach instead.)

After another 10 minutes it should have thickened up.

Cook your noodles as the directions state on the bag.

Serve the 'stew over the noodles' . For a healthier meal... just serve as a stew with a slice of bread.

*My husband prefers I cook up some polish sausage to serve his over as well.

Sweet Lime Fish Tacos

Ingredients

Tilapia 16 oz (1 lb)
2 Tbsp olive oil for cooking the fish
Lime Jelly 2 Tbsp
A Good mild or hot Corn Salsa, 4 tbsp
Daisy Light Sour Cream 4 tbsp
6 Tortillas, whole wheat
Iceburg lettuce 2 cups shredded

Directions
Heat the olive oil and add the fish cut into strips. (Salt and Pepper the fish strips if you want)

When you turn the fish to brown the other side, add the 2 Tbsp of lime jelly. It will reduce and glaze the fish. Give them a stir when done and put on your tortillas after you've heat them. Should make 6.

For the sauce topping... mix the light sour cream and corn salsa. Top your tortilla with this and a sprinkle of lettuce for crunch!
