The following are the steps to fillet a Flathead catfish:

1. Begin by making a cut behind the gills and down to the backbone. Turn the knife and go along the backbone, starting from the head and up to the tail.

2. Make a second cut along the bottom of the fish, from the anal fin up to the first cut behind the gills.

3. Use a pair of pliers to grip the skin at the end of the first cut, then peel the skin from the flesh.

4. Repeat this on both sides of the fish.

5. Once you've removed both fillets, use a pair of scissors to cut the ribs away from the fillets.

6. Carefully remove the bones that run through the center of the fillet.

And that's it! You now have two delicious Flathead catfish fillets.
