My hens laid a couple of eggs a while ago. But stopped. And started again today.

Are their eggs always good to eat? I don't know how or if I should test them or check them.

Floating eggs is silly, IMO.
Floating an egg will only tell you how old it might be.
They float due to evaporation when older.
It will not tell you if an egg is 'good' or 'bad'.
Plus then you've wetted the egg so it should be thoroughly washed and refrigerated.

When in doubt....
Open eggs one at a time in a separate dish before adding to pan or recipe,
use your eyes, nose, and common sense to decide if egg is OK to eat.

My cousins did an experiment to see how long unwashed eggs in the fridge can stay in the fridge and still be good. Of course the fresher the egg, the better it tastes. My cousin was able to use eggs that were 6 months old and they were still good.
