I have gambels quail, they are super wild, super flighty, quite enjoyable to watch in all their wild antics,
I also have coturnix quail, they are much calmer , but also flighty and startle easy , they are not tame like chickens, at least mine aren't but I don't handle them much... they are beautiful and great pets. I haven't tried eating any...yet.
As for care, those two types of quail seem to me very easy to care for, the coturnix don't even need the much space and I keep them on sand and dirt and just add fresh piles for them to play in daily and change it out every week or two, if the pens big enough they don't mess it up very fast at all. I keep them in the house, the gambels will go out side next month though. I might keep my coturnix inside since I love watching them so much. The coturnix are sweet, even though mine are kinda wild, they let me get them and are so cute the way they look around when I do. all quail are bright and curious little birds who love to explore. Hope this helped you somewhat wasn't sure what exactly you wanted to know. FYI I'm not an expert I've only had quail 2.5 months! But I love them! I would recommend everyone to try them. See how this coturnix looks at me when I hold him?

All I can speak to is Coturnux, but I've found they're very easy to take care of. They don't really seek out your affection, like some chickens do, but mine are easy to handle and let me pet them when they're relaxed. Personality-wise, they can be very skittish to very tame, varying bird-to-bird and influenced by how much you handle them.

I keep mine in an aviary on the ground, so they pretty much spend all day digging holes and napping and pay me no mind unless I've got treats. If you want a really cuddly bird, Coturnix might leave you disappointed. If you want a low-maintenance bird that's fun to watch, I highly recommend them.

Button quail can be really pretty, but they are super flighty and they rarely like being handled. They are about the size of a finch and their eggs are tiny, about the size of a nickel. They are usually monogamous and do best in pairs. They can go broody but aren't always the best mother's; sometimes the dad helps raise the chicks. Around 16 days for incubation and 6-10 weeks to maturity.

Coturnix quail are calmer for the most part. If you raise them right you can handle them with little to no issues. They can get up to almost a pound in weight, but are usually a bit smaller unless you have a jumbo variety. The eggs are usually about the size of a quarter. Coturnix rarely go broody, usually have to incubate the eggs for them; not sure how they are as mothers. 17-18 days for incubation and 6-8 weeks to maturity. The meat is dark meat.

I have only had button quail and coturnix quail. Of the two, if you want eye-candy and don't want to eat them or the eggs, go with button quail. If you want to eat the birds or their eggs, go with coturnix.

There are other types of quail too, but most of those are more wild and more likely to require a permit to raise.
