Are Some breeds smarter?

So I wonder if we let our children out into the wild would they eventually become smarter?

I recently got some sebright chicks and after raising silkie chicks I can see a massive difference. The sebrights get bored, they are much sharper and more 'bird-like', if you make a change to their environment such as adding a roost bar or changing from a blanket to straw they completely freak out. This compared to my silkies, one of which killed himself by jumping in fright while underneath a bench and knocking his head.
