Are the bigger ones males?

I have 7 week old turkeys. Can you tell the sex of a turkey by its size. Some are much larger than others.
 
At seven weeks of age it's still too early to say with any certainty.

I was just curious. Some of them seem quite a bit larger than others. I also see some of them strut around. Do only males do this or both sexes at this age?

Both sexes can strut, but if you've got one that is and is among the larger birds then it's a good sign that one is a tom.

At three months I can have a pretty good idea, but occasionally still be fooled. At four months I am certain. I get a LOT of folks who want sexed birds. I won't guarantee it before four months. The ones who want younger birds who insist I'll give them my best "educated guess" but make it clear that guess is all that it is so I cannot guarantee it.
