Funny, I thought that cross between a quiche and an omelette was called a frittata.  It is a staple in this household, whatever you call it.  Yum!


I don't know the difference, or where frittata comes from. (Italy, maybe?) She was born and raised in Spain, and when we had company coming over, she said she would cook a tortilla. Being that I was born and raised in the southwest US, I assumed she meant a quesadilla or something. Much to my surprise, she broke out this 12" diameter, 2" thick "egg pie" that was loaded with cheese and sausage and potatoes, that made a filling meal for 4. No matter what you call it, I have been converted!

And...it's a pretty good way to use up all those excess eggs!

OK, here is a pic of a Spanish tortilla. I used a dozen eggs, an onion, about 3/4 pound of my home made hot Italian sausage, and about a half pound of cheese (sharp cheddar and mozzarella).

That looks so yummy! My girls are all laying again so I have more than enough eggs to try this recipe out. Thanks for posting Cyborg!
 
the kids and I are doing a fire out back, a neighbor gave us some juniper. It's not the alligator bark juniper, I'm so bummed it has no smell. If anybody ever gets a hold of alligator park juniper please let me know


I have a great source for alligator juniper. I'm not home right now but I'll send his info when I get back. He's awesome and delivers from Payson. There is nothing like alligator juniper for a fire!
 
I just set my very first EVER batch of eggs in the incubator! So excited! So nervous! So....impatient.

oooh you'll really be hooked now! Have you read over Sally Sunshine's stuff, Hatching 101? Important to not let your humidity be too high the first 18 days tho, made that mistake once.

We have a frittata for dinner whenever we get ahead on our egg supply, probably once a week. It's a nice way to use up leftover veggies, too!
