Ascites

How would I know if my jumbo cornish x have ascites? The look fine, except that they are ugly. If they did have, could they still be eaten? Thanks
 
Yes, but you'd know because the bird will have a huge abdomen, the breast meat would start to atrophy away, and the face and body would turn purplish in the later stages.
