Ask a chef

We can buy it as part or as a entire bird, so I can buy as many necks I want.

Not as many options here.... I went into a Butcher shop once thinking I could buy a quarter side of beef.... He looked at me like I was a lunitic.... "Yeah I could do that" he looked at the cooler case and said " But why not just buy it here and pick it out from here."

I walked out. Butcher shops are hard to find these days...

I should make some pics of my butcher shop and market they are wonderful. He is a big shop IMO he sells everyday 5-7 steers, so I can find there every thing I want, as long as it is Cosher of corse!

Red Whippersnapper, Snow White Cherry, Grey's Sweet cherry tomatoes

I took photos of the leaf type and the bunches of GREEN tomatoes from the plants in the greenhouse. If nothing else, I won for resilience...for trying and I suppose, if you don't try, you never fail or come up short, eh.

Glacier (red) top and Black plum below

Bring them inside and with a ripe apple or banana, let the green tomatoes ripen and hope against hope to see some actual colour. Black, yellow, pink, orange, white, zebra striped, and red. At the beginning of the season, with mitt fulls of seed packets to plunk into awaiting dirt, I had visions of colourful and quantity. Not meant to be for this season.

So as I look at the four cucumbers I harvested and the ONE okra...I know I can add the okra to a pot of soup...but four cucumbers? Good gack, have mercy...ALL of four!

One cuke sorta looks like I could slice it up for a salad but the other three...seem more of the pickling kind. So stomach aches aside, what to do with four cucumbers...surely you don't pickle FOUR! Good gack...but in 2014...I planted cucumbers out in the veg garden plot and got nothing (I mean nothing, zippo, green growing plant and maybe two flowers) ...lots of other things grew well but I told myself, "Must fire up greenhouse again and grow cucumbers in there!" Now what...with four. Hilarious the pickles we put ourselves in...by our own hand too!

You can do from it very nice stew, or a slow cooking Rago with red wine and some fresh maltaliata pasta IT IS WONDERFUL!
No part in the animal is garbage! We eat EVERYTHING! We have 3-4 different stews from the head meat alone! From the lungs, liver, large intestine and the stomach we have WONDERFUL dishes! And so on .....

Tara the neck of turkeys, especially the male turkey, make wonderful soup!
Also the sheep neck is very good in soup!
And belive me mixing different meats can make some very nice surprises!

I feel the same way you do about using all the animal...no part is garbage but in easy to understand terms, typing the word GARBAGE does convey the meaning of using up these EXTRA parts that are usually not too easy to sell to others for consumption. Kinda like the Canadian comedian John Candy's movie The Great Outdoors where reference is made to HOTDOGS being made from "lips & buttholes!" Sorry, makes me laugh...

I think oxtail is so nice because you have a little bit of meat, and flavourful meat....you have bone to make a good broth with and then gristle & cartilage to make a jelly like liquid too...almost like adding okra to make a gumbo style broth. Hmmm...now you have done it Benny, my thoughts are about a nice oxtail soup....hee hee...see it so little at the stores to buy.

We too use "necks" to make broths. I guess if you think about it...oxtail and necks - front to back...both ends of the structure on the animals are sorta the same! Funny that!

My son and girlfriend want to celebrate Canadian Thanksgiving with us. So we go to their home and bring the turkey. I will be processing some tom turkeys for the special day. On the day, will put the turkey (or turkeys, not sure yet as Rick is already whining if we take the turkey to my son's home...there will be no leftovers here at home for us to enjoy...best part of turkey dinner--leftovers!)...so put the turkey(s) in the oven before I begin chores and should be pre-cooked so we can take the bird (stuffed of course) to his home and heat it up and make gravy there too.

A mobile caravan turkey meal...meals on wheels...oh the fun we could have with that. Reminds me of the year, when does our gas stove quit...right in the middle of a holiday turkey roasting. I was outside doing my chores and the smell of cooking turkey bird was getting fainter and fainter...I finally came back in to baste the turkey to realize...the 15 year old gas stove had quit. What to do...what to do? Special day, people there expecting DINNER! Quick thinking....we fired up the barbecue in the porch and finished cooking the turkey in there...saved the day! Instead of boiled potatoes, we baked them...all was saved and we chowed down on a REAL MEAL to celebrate we had a big enough barbecue to finish the job! Went shopping for a new gas stove but in the meantime, the microwave warmed up all the turkey dinner leftovers...we did not suffer a minute!

I might have done more justice to last night's salad...

I need to go shopping...have not found a case of olives to purchase at our usual store...so "I" need to go shopping. Made "Greek" salad last night...NO black olives...tasted OK, but miss them olives...did I say I missed the olives...yes... Running out of olives, might be a near death experience, eh. Need to stop, take time to feed our faces better...yes... What next, spinach salad with no spinach...what is our world coming to... ???

Tara the neck and the tail are the same!
Did you see this clip I have posted? If you have the time do it!

Oh Benny...if you asked a sheep if their neck and their tail were the same...you'd get a whole different answer...LOL

A sheep would say, "You may dock my tail if you must, but not MY neck...oh NO! Don't dock my neck."

My service provider does not allow me the luxury to view videos...but I bet this is a video on stuffing turkey with a goose or a duck! I have a Time Life (nfi) set of cookbooks that shows instructions on how to stuff different sizes of poultry within each other...bwa ha ha. Are you suggesting if I "love" my son...I need to "stuff" my turkey with much more than just bread stuffings? I think if I spoil that boy of ours any more...he will be completely ruined...ruined to the point where he will be harder to live with!

Found a recipe for stuffed goose neck...looks pretty durn tasty!

Guinness book of world records has this as the "largest single food item listed on a menu."
