The men folk here have long passed on.... A good 16-17 years ago.... Miss my dad and grandpa.... and their joking and teasing. Sigh.

My menfolk are gone so it was a quiet day.

But when i went through my favorite Mexican drive through on Sunday I asked the fellow at the window. He used to be a Mexican chef but he prefers working the front of the house now. I asked him what he was doing for fathers day.

He was marinating five juego gallinas (game hens) in orange and lime juices. He said some other spices but I didnt understand what they were. He split them in half to marinate and was going to be put on the Barbeque.

We often discuss ingredients and techniques when there is time. and hes working the window.

If you are familiar with Menudo its made with a spicy broth cows stommach and homony and veggies.... I love it but the Stommach is too rich for me to eat a lot of it...

I love love Pozole same ingredients but instead of stommach it has pork...

NOw take it a step furhter

BRoth with green chiles for spice homony and either fish or shrimp.... when I mentioned that his eyes lit up....

I so want to do this fish version... but I need to figure out what needs to go in the broth. because really the broth makes the soup.
