Most simple dish
Good piece of meat, extra virgin Olive oil, sage, rosmarie , bay leaf ,garlic ,Black pepper, sea salt, and patience :lol:
 
Interesting. 7 hours seems a long time. I usually do about 20 minutes to the pound at 350°F (177°C) so about half the time. Does the foil cover make it cook much slower even at about the same temperature?

The cover must be tight, 2-3 layers. The low heat and long backing time make marvels to this fatty cut!

Mmmm... the roasted garlic must be delicious too.
