The cover must be tight, 2-3 layers. The low heat and long backing time make marvels to this fatty cut!Interesting. 7 hours seems a long time. I usually do about 20 minutes to the pound at 350°F (177°C) so about half the time. Does the foil cover make it cook much slower even at about the same temperature?

I take all the liquids, the garlic ,some of the roasted herbs, a tspoon of mustard and grind them in a mortar and pestle making a wonderful sauce.
