At what age will a Jake be fully matured

So I just got two Turkeys A Spanish Jake and a Royal Palm hen. And I'm pretty new to Turkeys I have chickens, but at what age do the males full mature and strut their stuff.
 
Well, those are kind of two different questions. Turkeys are sexualy mature at 7 months. At that age they are capable of mating and reproducing. If the season is right, the hen can lay eggs at that age, and if the tom is also mature, the eggs will be fertile.

However jakes will start to display well before they are mature. I hatched about 20 poults in May and had one precocious little guy who displayed for all he was worth from the time he was 5 days old. The others saw that and joined him and the displaying has pretty much been constant ever since. The gobbling probably started around 4 months old.

If yours are new, your jake probably won't display any of these behaviors until he is well settled in. But once he is acclimated to this being his new home, he will likely start to display and gobble for you.
 
Heritage turkeys are not fully matured, weight wise until they reach about 18 months old, however most start laying the beginning of laying season, in your area, after they reach sexual maturity at about 9 months old. This varies a little depending on breed. If you are raising a Hybrid BB breed, they can start laying at about 6 months old. If you manage the BB tom's diet, he may be able to fertilize the first few eggs the hen lays, before he becomes too big breasted to mount her or you can put a large breed Heritage tom over her and get fertile eggs.
As far as displaying, both sexes can do that at a very young age. Often a 3 week old well display if it is trying to warn off something it perceives as a threat.
