Ugh...yesterday was not such a good day for me.

I started out OK...I had a few slices of lunch meat while making hubby's sandwich. I had coffee with splenda, sugar-free hazelnut syrup, and cream...Faux Cream of Wheat (made with Ricotta cheese, egg, flax meal, etc.)...Chili Cheese Dogs (no bun)...and then the really really bad choice...Sesame Chicken from a chinese fast-food place

Not much rice, just what stuck to my chicken as I was eating it.

I haven't even eaten anything yet today...was too busy this morning before taking kids to school, then went to my son's Kindergarten Graduation and Award Ceremony. I just got home, and now need to eat something before I pass out! I'll go make something GOOD.

I would absolutely love your pancake recipe

I had one a while back that I need to look up again. Mine was better if I made it real thin like a crepe, and then spread sweetened cream cheese on it (Splenda, or Da Vinci Syrup)...yummmmmmmm.

Where do y'all buy your low carb specialty products? I'm kind of in the middle of nowhere, and my Walmart has stopped selling most of my favorite stuff

I can buy some things if I drive 30 miles to the nearest Kroger or HEB. I also like to order off of netrition.com. I haven't ordered there in a while, but I think I'll place an order today.

ETA: Netrition has Bob's Red Mill Almond Flour for $8.99/pound, and they have NOW Natural Almond Flour for $4.69/pound. I think I'll try NOW, although I have no idea what the quality is....

I
also want to add: be careful buying a lot of the sugar free goodies. Too much of anything ain't good.

I do enjoy the carbquik bake mix. I've made a pizza dough that was pretty darn good, also you can make pancakes with this stuff too.

Ohhh! and biscuits too, add cheddar cheese and .......YUM.

I don't buy special "low carb" products.

I do buy coconut cream (unsweetened) from a local Mexican grocery store. I buy greek yogurt and the almond meal at Vitamin Cottage. I do get Da Vinci sugar-free syrups at Sam's, but other than that...

Meat
Dairy
Fresh veggies

That's about it.

I do not eat anything with soy in it. If I want something somewhat resembling a pasta dish, I don't buy the fake noodles, I just thin slice some cabbage and cook it in butter then top it with alfredo sauce and some grilled chicken.

I have seen too many people get caught up using the pre-packaged specialty foods and end up stalled. I would go broke trying to eat that way.

Home cooking using fresh whole foods is the best. Life doesn't always cooperate, but that is what I strive for.

I don't buy a lot of specialty products either...but I seriously can't get much here in my little town. In my Netrition shopping cart right now is: Almond Flour, Davinci Syrup, Dreamfields pasta, Mama Lupe's Low Carb Tortillas, HiLo Cereal, and Pumpkorn Honey & Flax (pumpkin seeds). I was trying to decide if I would get the Carbquick bake mix...maybe I will.

I was going to order some Nut Flax Granola, but it has maltitol in it. I can't eat any of those sugar-free products that have maltitol or sorbitol in them...YIKES they mess with my system
