Atkins/Low Carbers Support

Just wanted to say what a great thread and so much wonderful info posted.

I also wanted to share that 6 years ago I weighed 326#, I used the Atkins diet profile to lose the weight as I have some food allergy issues and Atkins was one of the ways I could eat what didn't upset my system and lose some weight. Well after a year of following it I lost 100#. After that first year the weight loss slowed dramatically, but still following some of the rules of Atkins and re-introducing some of the no no foods back in I have managed to lose another 45#. It has been a long road with some ups and downs but the effort was well worth it.

I was on blood pressure medication as well 3 times a day and now have been off for 1.5 years.

Yes, it would help! It is very hard to commit to change our habits, what ever they may be, and it sure is nice to have someone to talk with and draw encouragement from!

I'm sorry I haven't been on this thread in a couple of days...it's been a crazy crazy week here...

I have a question for y'all: What are a few of your favorite foods to eat? I need some ideas, but I am easily overwhelmed, so just a few at a time

I have several Low Carb cookbooks and I know there is some good food in there, I'm just having trouble finding it...LOL...sorry I am ADD and can't look at too many recipes at a time without my brain shutting down.

I made that Egg Drop soup and ate that for 2 days and it was AWESOME...I'll be making that a lot. Here are a few of my favorites:

Chicken and Egg Drop Soup
No Noodle Lasagna (Gr. Beef, Tomato Paste, Zucchini, Spinach, Ricotta, Mozzarella, etc)
Spinach Salad (Spinach, Bacon, Chicken, Red Onion, Low Carb Honey Mustard)
Taco Salad (Salad Greens, Taco or Fajita meat , Cheese, Avocado, Salsa, Red Onion, whatever else I feel like putting on it, sometimes Ranch dressing...LOL)
Faux Cream of Wheat (Ricotta, Egg, Cream, Flax Meal, Cinnamon, Vanilla)

I think the obvious is quiche. You can make it a million different ways. For lunch, I like to get deli turkey, take a piece of it, a slice of cheese, and some whipped cream cheese with chives, roll it up. I fix maybe 3 or 4 for lunch. I rotisserie chicken a lot. Meat loaf, with ground turky and ground round. I put a lot of onions and bell peppers in it. Rotisseried shrimp and steamed broccoli...mmmm....

I need to make some Meat Loaf....mmmmmm....haven't made that in a while. The lunch meat rolls are a good easy idea too...a lot of times I just eat the lunch meat plain as I'm making my hubby or kids a sandwich.

Those roll ups are tasty.

I also like to take jicama slices and basically use them like chips. They are great with a hot Queso dip or some blue cheese dressing. Large thin slices of jicama also make a good taco shell replacement.
 
Hmmmm...jicama...I've heard of it but never tried it. I don't even know where I would get it...I'd probably have to drive to HEB in Katy. I love living out in the country, but sometimes it's just so darn inconvenient

I'm going to start keeping a Katy Shopping List separate from my regular grocery shopping list.
 
I live in the county, but I am so close to 2 cities, I have plenty of different stores to choose from. The best deal on Jicama I get is at a Mexican grocery store. It is usually around 59¢/lb. I can get it at Safeway too, but it is usually 3 times as much. Can't complain about the quality though. The Safeway in my area runs a really good produce section.
